Todays recipe is again an easy one with not a lot of ingredients. I always make banana muffins or bread when I have some very ripen bananas left. Today I had two left so I went for the muffins.
Ingredients:
- 150g plain flour
- 150g caster sugar
- 150g butter, melted and cooled
- 2 eggs
- 2 bananas
- 1 tsp baking powder
- 6 tbsp milk
- a pinch of salt
- oil for greasing your muffin tray, depending on what tray you are using (I’m using a silicon one which doesn’t need oiling)
Method:
Preheat the oven to 200 degrees.
Mix the flour with the sugar, baking powder and the pinch of salt. In a jug mix the eggs with the melted and cooled butter. Mash your bananas.
Make a well in the middle of your dry ingredients and pour in the wet ingredients, including the bananas. Stir gently until combined.
Spoon the mixture into the muffin tray. I added some walnut halves to some, you don’t have too.
Bake in the preheated oven for 20 minutes until they are golden brown and firm to the touch.
When done transfer to a wire rack and allow to cool.
